Thai Fried Noodle

Thai Fried Noodles, also known as “Pad Thai,” is a popular and iconic dish in Thai cuisine. It’s a delicious and flavorful stir-fried noodle dish that typically includes a combination of noodles, protein, vegetables, and a savory sauce. Here’s a basic recipe to make Thai Fried Noodles at home:

Ingredients:
  • 200g dried rice noodles (soaked in warm water until softened)
  • 200g protein of your choice (shrimp, chicken, tofu, or a combination)
  • 2 cloves garlic (minced)
  • 2 eggs
  • 1 cup bean sprouts
  • 2 spring onions (sliced)
  • 1/4 cup chopped peanuts
  • 2 tablespoons vegetable oil
For the Sauce:
  • tablespoons soy sauce
  • tablespoons tamarind paste
  • tablespoons fish sauce
  • tablespoon brown sugar
  • tablespoon lime juice
  • teaspoon chili flakes (optional, adjust to taste)
Instructions:

1. Prepare the Sauce: In a small bowl, mix together soy sauce, tamarind paste, fish sauce, brown sugar, lime juice, and chili flakes (if using). Set aside.

2. Prepare the Noodles: Soak the dried rice noodles in warm water until softened, then drain and set aside.

3. Cook the Protein: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add minced garlic and cook until fragrant. Add the protein of your choice (shrimp, chicken, tofu) and cook until fully cooked. Remove from the pan and set aside.

4. Scramble the Eggs: In the same pan, add another tablespoon of oil. Crack the eggs into the pan and scramble until cooked through. Push the eggs to one side of the pan.

5. Stir-Fry the Noodles: Add the softened rice noodles to the pan along with the prepared sauce. Toss everything together until the noodles are well coated with the sauce.

6. Add Vegetables and Protein: Add bean sprouts, sliced spring onions, cooked protein, and half of the chopped peanuts to the pan. Toss everything together until heated through.

7. Serve: Transfer the Pad Thai to serving plates and garnish with the remaining chopped peanuts. Serve hot with lime wedges on the side.
